Carrot Cake Recipe

7 oz self raising flour

3 oz sultanas

half a large orange zest

1tsp ground cinnamon

half whole nutmeg grated

1tsp baking powder

half tsp bicarbonate

pinch salt

3 eggs

6fl oz sunflower oil

6oz brown sugar

7oz grated carrots

icing

crème cheese zest orange icing sugar

gas mark 4

350 degrees F

177 degrees C

Reduce by 25deg and 10 mins in fan oven
